Wait, it's only May 8th.
While the rest of the country has been experiencing above-average temperatures, here in the great lakes region it's been chilly. Ten to twenty degrees below average. Until today. It reached 84. Blessed every saint that ever walked the earth; finally. No one complained, but we definitely exclaimed, "it's hot!" Because it was. Our house is not prepared for this. I had to search high and low for our window fans. Thank goodness for window fans. Have I been thankful for that yet?
On a side note, we had dinner with some wonderful friends, Jess and Jake (and their girls, Yael and Avah, I've blogged about that cutie patootie here. It didn't take much arm twisting when venison steaks were mentioned (which were delicious btw). The menu also included pretzels (hey Jess, I need that recipe), an amazing couscous salad (which I know was super easy to throw together, but I'm not that creative), a bowl of juicy, fresh fruit (did I mention today felt like summer, perfect!), and apple crisp with homemade french vanilla ice cream. Would you like to guess which dish(es) I made? It shouldn't be too difficult if you were paying attention.
The apple crisp and vanilla ice cream. It hit the spot. Man oh man. It was so good.
I had given some thought to strawberry shortcake, but had apples that unfortunately aren't fresh enough for regular snacking. I figured baking them would be the best thing for them. And it was.
So maybe I'm thankful for apple crisp too. Served warm with vanilla ice cream.
Everyone has a story. This is mine. This is my place to share my thoughts, random insights, and photos (if I remember).

to-do lists
This week started off innocently enough. And then… I'm not sure what happened. But I got very busy. I have a lot to do and not a lot of time in which to get it done. I'm thankful for to-do lists. They keep me organized and only slightly more sane.
On a different note, today is my dad's birthday. Happy Birthday Dad! I watched him via FaceTime open his gift from all of us (Cyndi & family, Mom, Bill and me). It's a new digital camera! I know he will get a lot of use out of it. Especially with Skylar (who's totally into soccer and is really good) and Spencer (who is learning how to kick a soccer ball).
With that being said, the dishes aren't doing themselves and the laundry is starting to walk on its own.

silly dates
Today is Cinco de Mayo which the media is reminding us is not Mexico's Independence day, but a silly made-up American holiday. But it does have to do with a battle and keeping the French from taking over (you can read about it here). I'm not even part Mexican, but I do celebrate gastronomically.
Tonight, I made the Mexican Skillet. Onion, chorizo, sausage, pinto beans, tomato, and corn make for the basis of the dish. Top it with cheese and serve it with lime, avocado and sour cream. Yum! It made plenty of leftovers too. I may have to make some burritos out of it.
More importantly, yesterday was the 4th. And, when you think about it, can be best summed up by saying, "May the 4th… be with you."
Every year I forget May the 4th. While I don't consider myself a Star Wars fanatic, I do know the movies pretty well. Maybe next year I'll remember May the 4th.
On another silly holiday note, Sandwich week is coming. I should start planning which sandwiches I'll be making.
I'm thankful for food, and my love of fixing it.

Congratulations Molly!
I survived the retreat. It was a great weekend.
Bill and I ended the weekend by celebrating Miss Molly's college graduation from Hope.

This was taken back in the fall.
There's Molly!
I'm thankful to have been a part of her high school, and now college, journey. I hope that we can continue to watch her grow into adulthood.

a retreat for confirmation
I am headed off for a retreat with the Jr. High. It's the last one for the Confirmation year.
It has been a good year. Our curriculum has made it oh so easy.
I'm not even stressed about the retreat. I have cut out stoles for each person to paint. I have a couple of lists of things I need to gather, but all of those items are in my closet in the church. I have snacks ready to put in the car. Really, all I have to do is load up the car.
I don't think I'll blog while I'm at the camp where we'll be staying. First, we're on Lake Michigan, the same place the Women at First had their retreat back in March.
I hope the ice and snow has melted. If not, I'll take pictures! Because we'll be so close to the lake, the chance of having service is minimal. Plus, I won't have internet access.
And I'll also be busy trying to keep ten Jr. High students from doing what Jr. High students do.
Annoy the other leaders.
Just kidding.
They like to annoy each other.
Except they really don't. I've bragged before about how amazing this group of students has been. They continue to amaze me. We helped with the Second Best Sale intake last Sunday and those students worked.
We'll be making Mother's day gifts next week. And then we're done! It's the end-of-the-year party on the 18th. Except Confirmation continues until June 8th, Confirmation Sunday which also happens to be Pentecost.
Today I'm thankful for the authors of the curriculum. They made it so easy.
