I haven't written about dinner or new dishes we've tried lately.
Lately, we haven't tried new dishes. I haven't written about dinners we've had.
We've eaten dinner, but lately haven't tried anything new.
It's clear as mud now, right?
I told you we had hot dogs Wednesday night. It turns out it was National Hot Dog Day!
Thursday night I had our Quota summer celebration.
Last night we had B.L.T.'s and corn on the cob. You know that is my favorite combo/summertime dish.
Tonight we had brats and… I made cornmeal broccoli cakes.
It was like a pancake, with cornmeal and flour. It had eggs and baking powder in it. It had a little bit of milk. And, it had cooked broccoli. Except Bill grilled it. So it was grilled broccoli. But it was still cooked. Just on the grill.
I'll stop now.
We had these broccoli cakes. The recipe said it makes 4 servings. Apparently a serving was eight cakes. I made them into pretty good size cakes. Seriously, it made almost two dozen cakes.
I know, my math is incorrect.
They were really good. They were different, but tasty.
Oh, we topped them with goat cheese and crumbled bacon, of course! I also chopped up fresh herbs (oregano, parsley, and thyme) and sprinkled those on top for flavor.
I hope we liked them because we'll be eating them for the next few days.
Everyone has a story. This is mine. This is my place to share my thoughts, random insights, and photos (if I remember).

another food post
I made some Creamy Carrot Soup tonight.
I actually made a lot of Creamy Carrot Soup.
I had a 3 pound bag of carrots that tasted different than the other bags of carrots I've bought. My reasoning is that these weren't organic. I really could taste a difference.
So what better way to use them then in a soup?
It's a pretty easy soup and you can eat it warm or cold.
I had to freeze half of it because I used all the carrots (the recipe only calls for 1 1/2 pounds). I doctored it up a bit too. I added mascarpone cheese and a secret ingredient. I'm not going to tell you until Bill tries it. It's nothing scary and I found another recipe that used it, so I thought, why not? I also used thyme and a dash of celery salt. It's pretty tasty. It needs croutons.
I'll make more croutons tomorrow.
The other night I made pancakes in order to use up the Bisquick that I had in the cupboard. I stuck the pancakes in the freezer.
Yes, I made pancakes just to stick in the freezer.
I'm weird that way.
But tonight I thought those pancakes would be good with the homemade chocolate hazelnut spread I have. So I am going to try that for breakfast tomorrow. I'll let you know how it tastes.

breakfast makes everything better
I have found a recipe for a delicious cinnamon syrup. It is very similar to one that Heather and I had in Nashville at the Pancake Pantry. Add in the mini chocolate chips on top of the pancakes, and bingo! I think I've got it.
So I had pulled some blueberries out of the freezer earlier in the week and had been eating them in my yogurt every day. But I knew I needed to use up the rest of them. I figured pancakes would be the best way to go. I then decided I would make pancakes for lunch today!
I didn't use my regular recipe which you can find at the Melon Collie. I just used generic pancake batter. I did use whole milk plus the blueberries. Pancakes with chocolate chips and cinnamon syrup make everything better.
